Soup Recipes to Warm a Chill Day

Living in one of the best cities in the country provides a culture which makes you want to stay in the city for a long time because of the views, the restaurants, and the “chill” vibe it gives out. Living here also guarantees a colder temperature, so here are a couple of soup recipes anyone can do to warm themselves on a chilly day. 

Beer and Cheese

Believe it or not, this recipe is sure to crazily satisfy you! Just prepare these easy steps.
3    bottles    dark beer s (36 oz. total)
1    pound grated Emmenthaler or Gruyere cheese,
1    small    diced onion
1    small    cleaned and diced leek
2    cloves    crushed garlic
1    small    peeled and diced carrot
1    rib    diced celery
2    tablespoons Worcestershire sauce
3    springs    fresh thyme leaves
1 1/2    tablespoon kosher salt
1    teaspoon ground black pepper
2    slices rye bread, cut into cubes

  1. Heat a medium stockpot or Dutch oven on medium heat. The butter, onion, garlic, carrot, celery and leeks have to be added to a medium stockpot on medium heat. Continue cooking until the onions become translucent.
  2. The vegetables have to be soft before adding the ingredients, except for the bread. Simmer the soup for 45 minutes.
  3. Next is to add the cubed rye bread then continue to cook for another 15 minutes. Let it cool for a while and remove it from heat.
  4. Pour the soup in the blender for halfway then close.
  5. Set the blender on for low and blend for two minutes until the soup turns to puree.
  6. Finally, place all back to the Dutch oven or stockpot then garnish with pretzel sticks or rye croutons.

French Onion

1 1/2    pounds    thinly sliced onions
1    ounce    clarified butter
2    ounces    Calvados or white wine
4    cups    chicken stock
4    cups    beef broth
6    to 8    large croutons
1/2    pound    grated gruyere cheese
Salt and pepper

  1. Get a huge and heavy bottomed pot to cook the onions in the clarified butter in medium heat until it turns into brown and caramelized texture for around 30 minutes. Stir occasionally.
  2. Deglaze the pan with the Calvados or white wine then add the stock and broth.
  3. Simmer until the onions turn soft, season with salt and pepper.
  4. Allot the soup to individual oven-proof crocks or bowls.
  5. Optionally put croutons on top of each soup. Place heavy sprinkling of the grated cheese and put under the broiler in your oven until it turns golden brown and bubbly.

Creamy Carrot

Last, if you’re looking for a simple soup, follow these easy steps.
  1. pound of chopped carrots (or baby carrots)
½          small onion
  1. clove garlic
pinch of cumin
juice of 1 lime
  1. tablespoons of plain yogurt

  1. Steam all the carrots in a microwave until it becomes tender.
  2. Mix in a blender with ½ onion, 1 clove of garlic, juice of the lime, and a pinch of cumin.
  3. Add 2 tablespoons of plain yogurt once it is mixed altogether.
  4. Season with salt and pepper then transfer onto a stove or microwave to heat.
  5. Before eating, serve with lime wedges, half tablespoon of yogurt, and chopped cilantro.

Follow these alternative ways to treat yourself instead of buying medicine for cough and cold. It may or may not entirely cure your sickness, but it may prevent it for the meantime. However, it is guaranteed that your taste buds will be satisfied once you have these delectable soups.
